Shrimp-Stuffed Celery with Capers

2 4½ oz cans of tiny shrimp, rinsed and drained well
6 to 7 Tbsp mayonnaise
3 to 4 Tbsp fresh lemon juice
3 to 4 Tbsp drained capers
Couple of dashes hot pepper sauce (optional)
Spike to taste or salt and pepper
6 to 8 celery stalks, rinsed and dried

In a medium bowl, place shrimp, mayonnaise, lemon juice, capers, hot pepper sauce, and spike, and mix until thick consistency.  Cut stalk 2 to 3 inches long, and stuff with shrimp mixture.

Makes 25 to 30 pieces.
